Equipment: 350 ml highball glass and bar spoon

Ingredients

Use level 5 ml teaspoons and weigh ingredients where grams are given.

Method

  1. Put mint, lime juice and sweetener in the glass. Press the mint gently two or three times with the spoon; do not shred it.
  2. Add rum and ice. Top with soda water and stir gently from the bottom.
  3. Add the lime wheels. Taste and adjust with 1–2 extra drops only if needed.
  4. For the alcohol-free version, omit rum and use 145 ml soda water in total. Keep the other ingredients unchanged.

Sugarless Liquid Sweetener

4 drops give the sweetness of 1 teaspoon of sugar. Use the supplied dropper. Eight drops equal 2 teaspoons of sugar in sweetness; 12 drops equal 3 teaspoons.

Storage & ingredients

Make immediately before serving to retain carbonation.

Allergens: Check the sweetener and rum labels. Alcoholic version contains alcohol.

Lime contributes a small amount of natural sugar.
