Coconut ice pops
Simple coconut ice pops with a little shredded coconut. Let them soften briefly after freezing for a more pleasant bite.

Ingredients
Use level 5 ml teaspoons and weigh ingredients where grams are given.
Method
- Warm coconut milk, water and sweetener gently, stirring until dissolved. Do not boil.
- Stir in coconut, vanilla and salt. Cool for 15–20 minutes, stirring occasionally to redistribute coconut.
- Divide among moulds, leaving 5 mm headspace. Insert sticks according to the mould instructions and freeze at least 6 hours.
- Run the outside of each mould briefly under lukewarm water to release. Leave the pop 3–5 minutes before eating.
