Chocolate chip cookies
Buttery cookies with pieces of dark chocolate. Shaping them before baking helps compensate for the reduced spreading of a sugar-replacement dough.

Ingredients
Use level 5 ml teaspoons and weigh ingredients where grams are given.
Method
- Beat butter and powdered sweetener for 1 minute. Beat in egg and vanilla, scraping the bowl.
- Mix flour, baking powder and salt, then stir into butter mixture. Fold in chocolate. Chill dough 20 minutes.
- Heat oven to 175°C conventional or 155°C fan. Line trays. Divide dough into 14 balls and flatten to discs about 6 cm wide and 1 cm thick; leave 5 cm gaps.
- Bake one tray at a time for 12–15 minutes until edges are lightly golden and centres look set but still soft.
- Cool 10 minutes on the tray, then move to a rack. They firm as they cool.
