Vanilla panna cotta
Softly set vanilla cream served in glasses. A measured amount of gelatine gives a gentle wobble without needing to unmould it.

Ingredients
Use level 5 ml teaspoons and weigh ingredients where grams are given.
Method
- Sprinkle gelatine evenly over cold water in a small bowl. Leave 5 minutes to bloom.
- Warm cream, milk, sweetener and vanilla in a saucepan until steaming, stirring until sweetener dissolves. Do not boil.
- Remove from heat. Stir in bloomed gelatine until fully dissolved. Strain into a jug.
- Leave 10 minutes, stir gently, then divide among four glasses. Cover and refrigerate for at least 4 hours until softly set.
