Ingredients

Use level 5 ml teaspoons and weigh ingredients where grams are given.

Method

  1. Heat oven to 170°C conventional or 150°C fan. Line the tin with baking paper.
  2. Mix oats, almond meal, flour, sweetener, cinnamon and salt. Stir in butter until damp crumbs form.
  3. Reserve one-quarter of this crumb mixture. Mix egg and vanilla into the remainder, then press it firmly and evenly into the tin.
  4. Scatter reserved crumbs over the top and press lightly. Bake 25–30 minutes until golden at the edges and set in the centre.
  5. Cool completely in the tin for at least 60 minutes, then lift out and cut into 12 bars.
