Vanilla chia pudding
A simple overnight pudding with vanilla and plumped chia seeds. Stirring twice prevents a thick layer of seeds forming at the bottom.

Ingredients
Use level 5 ml teaspoons and weigh ingredients where grams are given.
Method
- Warm 50 ml of the almond milk gently in a small saucepan. Stir in the sweetener until dissolved, then stir in the remaining cold milk and vanilla.
- Whisk in chia seeds and leave 10 minutes. Whisk thoroughly again, scraping up any seeds from the bottom.
- Divide between two jars, cover and refrigerate for at least 4 hours or overnight.
- Stir before serving. The texture should be softly spoonable with fully hydrated seeds.
