Vanilla chia pudding

Ingredients

Use level 5 ml teaspoons and weigh ingredients where grams are given.

Method

  1. Warm 50 ml of the almond milk gently in a small saucepan. Stir in the sweetener until dissolved, then stir in the remaining cold milk and vanilla.
  2. Whisk in chia seeds and leave 10 minutes. Whisk thoroughly again, scraping up any seeds from the bottom.
  3. Divide between two jars, cover and refrigerate for at least 4 hours or overnight.
  4. Stir before serving. The texture should be softly spoonable with fully hydrated seeds.

½ level teaspoon gives the sweetness of 1 teaspoon of sugar. Use the named Sugarless blend and weigh the amount in this recipe; pure stevia extract is not interchangeable.
