Banana bread

Ingredients

Use level 5 ml teaspoons and weigh ingredients where grams are given.

Method

  1. Heat oven to 170°C conventional or 150°C fan. Grease and line the tin with baking paper.
  2. Whisk banana, sweetener, butter, eggs, yoghurt and vanilla until evenly mixed.
  3. In another bowl, whisk flour, baking powder, bicarbonate of soda, cinnamon and salt. Fold into the wet mixture just until no dry flour remains.
  4. Scrape into the tin and level. Bake 55–65 minutes, covering loosely with foil if the top darkens early. A skewer inserted in the centre should show moist crumbs but no wet batter.
  5. Cool in the tin for 15 minutes, then lift onto a rack and cool for at least 45 minutes before cutting.
