Banana bread
A moist wholemeal banana loaf with a gently sweet crumb and a touch of cinnamon. Weigh the peeled bananas so the batter has the right amount of moisture.

Ingredients
Use level 5 ml teaspoons and weigh ingredients where grams are given.
Method
- Heat oven to 170°C conventional or 150°C fan. Grease and line the tin with baking paper.
- Whisk banana, sweetener, butter, eggs, yoghurt and vanilla until evenly mixed.
- In another bowl, whisk flour, baking powder, bicarbonate of soda, cinnamon and salt. Fold into the wet mixture just until no dry flour remains.
- Scrape into the tin and level. Bake 55–65 minutes, covering loosely with foil if the top darkens early. A skewer inserted in the centre should show moist crumbs but no wet batter.
- Cool in the tin for 15 minutes, then lift onto a rack and cool for at least 45 minutes before cutting.
